Miss pancakes? Yeah, I was too. So that’s why I found this awesome recipe for the best pancakes I have ever had. The best part is, they’re completely guilt free as well as fabulous! 1 1/4 cup Spelt or rice flower (I like spelt, but either works)
2 Teaspoons baking powder
1/2 tsp salt
1 tsp ground cinnamon (I just pour a lot in, it makes the pancakes amazing)
2 tbsp oil (any oil works!)
1/3 cup water
1 to 1 1/4 cup almond, rice, or soy milk
1 tsp vanilla extract
2 tbsp pure maple syrup.
Oil a large skillet and preheat over medium high for 2 minutes. Meanwhile, mix all of the ingredients together just until everything is combined. Be careful not to over mix. Cook the pancakes until they are browned on the bottom and bubbles form on the top.
Optional- add in semi-sweet, dark, carob, or grain sweetened chocolate chips, blue berries, or bananas.
These are amazing. I make them every Sunday. If you’re cooking for a large crowd, you may want to double the recipe, seeing that it makes about six 6-7 inch pancakes.
