Miss pancakes? Yeah, I was too. So that’s why I found this awesome recipe for the best pancakes I have ever had. The best part is, they’re completely guilt free as well as fabulous! Credit for these babies go to Isa Chandra Moskowitz, author of Vegan with a Venegeance (a highly recomended cookbook). 

1 1/4 cup Spelt or rice flower (I like spelt, but either works)

2 Teaspoons baking powder

1/2 tsp salt

1 tsp ground cinnamon (I just pour a lot in, it makes the pancakes amazing)

2 tbsp oil (any oil works!)

1/3 cup water

1 to 1 1/4 cup almond, rice, or soy milk

1 tsp vanilla extract

2 tbsp pure maple syrup.

Oil a large skillet and preheat over medium high for 2 minutes. Meanwhile, mix all of the ingredients together just until everything is combined. Be careful not to over mix. Cook the pancakes until they are browned on the bottom and bubbles form on the top.

Optional- add in semi-sweet, dark, carob, or grain sweetened chocolate chips, blue berries, or bananas.

These are amazing. I make them every Sunday. If you’re cooking for a large crowd, you may want to double the recipe, seeing that it makes about six 6-7 inch pancakes.

Alright. When people think about Vegans, the first thing that they think is that vegans are insane, health crazy, tree hugging freaks that are no fun and annoying. But, as I and all of my fellow vegans out there know, that’s pretty much the opposite of true. Sure, we eat more veggies and fruits than most people, and yeah, maybe we care about our health more than others do. But does that make us “crazy, tree hugging freaks”? Ummm…NO! This blog is designed for all my vegan bitches out there wanting to hear current news about veganism, wanting to find cool vegan recipes, or just wanting to be apart of some vegan orginization.
